October is Hispanic Heritage Month, and we want Latinos to live long and productive lives by adding milk to your diet. You should start and finish your day with a glass of milk; not matter if you like whole milk, skim, or 2% it is important to get your daily recommendations of three glasses of milk. October is one of my favorite time of the year because the weather is becoming crisp, the leaves are changing colors and it’s time for everyone’s favorite; pumpkins!
Today, I am sharing two of my favorite recipes from Chef; Giorgio Rapicavoli; Rapicavoli, is MilkPEP’s first milk and strength ambassador as well a “Chopped” winner. He is re-creating classic Latin recipes by adding 8 grams of quality protein of milk. Milk is such an affordable and important staple in preventing nutrients that many Americans are lacking.
I decided on two recipes from FuertesConLeche; Pudin De Chocolate Expresso Casero (Chocolate Expresso Pudding) and Latte De Pastel De Calabaza Sin Azucar (Pumpkin Pie Latte). Both these recipes are created by Chef Giorgio and connect with Latino culture.
Pudding is a favorite snack, dessert and holiday treat in Latino culture it’s made with simple ingredients that you probably already have at home and takes less than an hour to prepare. You’ll take in only 271 calories, and you take in 317 mg of calcium! For my second recipe, it’s everyone’s favorite; pumpkin! This easy and delicious sugar-free latte is sure to satisfy your pumpkin craving AND get some milk in. You’ll save time and money by creating this recipe at home, add whipped cream at the top for additional flavor.
Chocolate Espresso Pudding
Dissolve cornstarch, coffee, and cocoa with ½ cup of chocolate milk and set aside. Dissolve the eggs, ¼ cup of chocolate milk and set aside. Add both mixtures together the rest of the chocolate milk, boil while stirring constantly. Add the remaining ingredients and let cool. Serve in martini glasses and garnish with fruit.

Pumpkin Pie Latte
Hot steam the milk and syrup, then pour into a cup and add in the espresso. Spoon a thin layer of milk foam on top to coat.
